My Slice Pizzeria Opens

What do Bart Simpson, the Teenage Mutant Ninja Turtles and every hipster in town have in common? That’s right, pizza! Move over burgers and Mexican, because pizza’s back. With specialist ingredients, finely prepared flour blends and clever marketing wafting out from every newly opened pizzeria, two-for-Tuesdays from Dominos has never looked so unappealing. We spoke to co-founder Julian to find out what they’re doing differently.

What’s My Slice then?
We went to see my brother-in-law’s uncle Pietro in Rome and made some dough, saw how it could all come together when it’s hand-made, and decided to ship it over to the UK. We import in the Italian toppings too, the nduja sausage, the Calabria sausage, the pulped tomatoes…

What makes you different?
A slice of our pizza base is only 125kcal so depending on the toppings you choose, it can be a healthier lunch option. We do gluten-free, vegan, vegetarian. We’re keeping it as traditional as we can.

You make a point of branding yourselves as Roman Pizza. What does that mean in terms of taste or preparation?
It’s all about the dough. It’s a special lighter blend of wheat ‘oo,’ soya and sourdough flour. It’s traditional and hand-kneaded and we display the pizza in square slices and warm them up in the stone-baked oven to crisp the base, like they do in Rome.

My Slice opened in Brighton a week ago and having been asked to sample their wares, we can confirm it’s definitely worth a visit. The bases are crisp and light, the toppings plentiful, and with slices starting at £2.30 it’s a really cheap place to get lunch if you’re in the centre of town. They are starting to sell breakfasts this week, and already have a selection of tangy cordials, pastries and deserts and coffees. My slice was pretty tasty, actually.
